You can modify the guide under the terms of the GNU Free Documentation License [http://www.gnu.org/licenses/fdl.txt]. In a nutshell you can use it, copy it, modify it, but not plagiarize it. You may also want to check with your school about this. They probably have some guidelines on this. I would also suggest changing the title to not use the words "pocket linux" to avoid confusion.
As far as similar projects go, you might want to look at Architect [http://architect.sourceforge.net]. This project has the ability to turn source code into binary packages with one simple command. For example 'architect coreutils-5.0' will build coreutils for you and package it up in a .tar.gz file.
You could use both the Pocket Linux Guide and Architect to help with your distro project. When you're ready to publish, see http://www.tldp.org/LDP/LDP-Author-Guide/html/index.html for information on sending to TLDP.
